What’s fresh in the Pescatores Kitchen
-    Local halibut & salmon are in Season and are delivered fresh every day.
-    Dover sole & Sablefish (black cod) are in season too.
-    Other local produce: Strawberries, peaches, Tomato, Kale, Dungeness crab are all local and in season.
-    There are 5-7 additional appetizers and main courses on the menu for the summer season so check them out – as well as the old   favourites of course!
-    Did you know that Pescatores smoke all their own fish!?  Well now you do…
-    No prefab food is used at Pescatores; everything is made fresh by the kitchen’s strong talented and hard working team – Go team!

What inspires the menu at Pescatores?
“A lot of my inspiration comes from my background  in French cuisine  and Asian fusion.   I’m Toronto born and raised and George Brent Culinary and then worked for the Oliver Bonocci group for a while before heading to Victoria with the opportunity to work at Pescatores .  Victoria a great place; the weather mountains and fresh air makes it feel like you’re on holiday every day!  I’ve been working here now for 6 months, making sure to preserve the old favourites that Pescatores is known for so that our loyal customers come back for time and time again…but we’ve also added some new and exciting main courses and appetisers, focusing on what is in season and locally available.”
